Simple Starters

From the menu at Belle House.

(serve with triple cheese straws)

Serves 25



2 ripe avocados

4 tbsp double cream

1 tsp vitamin C powder

1 clove of garlic

Salt and pepper



• Put the avocado flesh into a food processor and sprinkle with the Vitamin C powder which will slow down the oxidisation.

• Add the crushed garlic and blend until smooth.

• Add a pinch of salt and pepper and the double cream, pulse the blender until the cream is well blended and smooth.

• Keep in the fridge, serve with triple cheese straws.

• Serve in shot glasses as a canape or in a simple bowl as a starter.



Triple Cheese Straws



A4 sheet of puff pastry

Blue cheese (grated)

Parmesan (grated)

Beaten Egg wash

Poppy seeds



• Brush the puff pastry with the beaten egg wash and cover half the sheet with the grated cheeses.

• Fold over and press all the pastry down.

• Roll with a rolling pin until both sides stick together.

• Egg wash the outside and sprinkle on poppy seeds, then freeze.

• Defrost when needed, cut into strips and twist.

• Bake in the oven on 180 degrees C for approximately 8 minutes or until golden brown.
